If you don't enter to the submenu of the stats of your character, It doesn't change anything at all. To enter to the submenues under the Status option in the main menu you must press the 'A' button. None of the sub options under the status option works in Vnes. You can't modify nothing, because the A button doesn't work. I tried also an unhacked version of the rom (only translated) and the original rom in japanese, but the submenues under status doesn't work at all in Vnes.
