The technique I use to create these arrangements is very time consuming takes a lot of effort. I start by listening to a piece whilst sitting at the piano.

Here I can quickly establish the key and the time signature. Then I sit at the PC with Sibelius and start writing down the notes whilst listening to the music over and over with it slowed down.
